Vegetarian “break-fast” Pizza 

  
The perfect post-Yoga meal to break fast at 12pm, especially if you don’t feel like eating meat but need something substantial to get you through the afternoon. It also couldn’t be easier to prepare.

Every now and then (for me it is now nearly a day occurrence) it is highly worthwhile fasting. This can be as simple as skipping breakfast or as drastic as not eating for 1-2 days. Intermittent fasting has been show to boost HGH (human growth hormone) levels, popularly coined the fountain-of-youth hormone, allows the body to utilise fat as a primary energy source and also assists the brain in producing some more lovely hormones that can protect from brain cell degeneration.

By refuelling with a meal such as this after fasting, we are keeping our bodies in a state of ketosis to allow our bodies to use energy more efficiently and continue the production of all those protective hormones.

Serves 1
What you need:

  • 3 eggs
  • 1 tablespoon coconut oil
  • 1 tablespoon Italian herbs 
  • 30g of your favourite cheese, sliced 
  • 1 tablespoon best quality basil pesto
  • 1 tomato, sliced
  • Few kalamata olives
  • 1 tablespoon dukkah (optional)
  • Baby spinach
  • Salt and pepper 

What you do:

Heat oil in a pan over high heat. Whisk together eggs and herbs and season with salt and pepper. Slice tomatoes.

Pour into pan and layer tomatoes, olives and cheese on top. Cook 2 minutes then transfer pan to griller to cook the top of your pizza. Once cooked and cheese is melted, add basil pesto, dukkah and garnish with spinach leaves.
