Lebanese Meatballs W/ Black Tahini Hommus and Salad


What you need:

500g grass fed organic ground beef
1 tblspn coconut oil
1/2 onion diced
3 garlic cloves crushed
1 egg
Small bunch parsley, chopped
1/2 cup lemon juice
2 tspn cumin
1/2 tspn allspice
1/4 tspn cinnamon
1/2 tspn ground coriander
Salt and pepper

1 can organic chickpeas
2 tblspn black tahini
Salt and pepper to taste
1/4 cup water
1/4 cup evoo
1/2 tspn smoked paprika
1/4 tspn cayenne pepper

1 cup chopped parsley
1 tomato chopped
1/2 red onion chopped
1/4 cup pepitas
2 tblspn balsamic vinegar
2 tblspn avacado oil

What you do:

Combine first 12 ingredients (save 1 garlic clove and 1/4 cup lemon juice for Hommus) a bowl, mix with hands and roll into small balls. Fridge 15 mins.

Place next 7 ingredients in food processor and blend until smooth with left over garlic & lemon.

Mix last 6 ingredients to make a fresh side salad.

Heat oven to 180, heat coconut oil in pan (high heat) and brown meatballs (3 mins). Place in oven to cook through (5-6 mins).

Enjoy with hummus and salad
