Healthy Snickers Bar

This is a really healthy snack in moderation, great source of mct’s, saturated fats, omega 3 & 6 and antioxidants. Make it even healthier by adding chia to base.

Base:
1/2 cup raw almonds
1/2 cup walnuts (or other nut)
1/4 cup LSA mix
1/2 cup toasted shredded coconut
1/2 cup dates
1/3 cup coconut oil (melted)
1/2 cup raw cacao

Peanut butter layer:
1/2 organic peanut butter
1/3 cup coconut oil melted
1/4 cup maple syrup/ honey or equivalent sweetener (stevia)
1/2 tspn cinnamon
1/3 cup peanuts

Choc layer:
2/3 cup coconut oil
2/3 cup raw cacao
3 tblspn honey/maple or 5 drops stevia
1/2 tspn vanilla extract

Base:
All ingredients in food processor 2 mins or until blended well. Add more coconut oil if too dry

Peanut layer:
All ingredients except peanuts in food processor. 3 minutes. Stir through peanuts

Choc layer:
Melt all ingredients over low heat, stir well.

Press base firmly into tin lined with grease proof paper. Spread peanut layer. Freeze 15 minutes then pour over chocolate mix. Refrigerate
